They're not exactly bricking them (at least not unless you reset the device), they're blocking any ability to use the Amazon store. As long as you can live without the store and read existing titles, your Kindle will be still usable.

Amazon to end support for older Kindles, prompting user outcry

Best solution to this problem, by far in my experience. It's a little less convenient, but airplane mode + Calibre + USB cable is the way to go. I haven't used the Amazon store in years for e-Books, but my Kindle still works.

Kindle offline use

You can easily download books from other places, even libraries, and send to a kindle via "send to my kindle app" if you connect it to wifi, no need to actually purchase books from Amazon. If you want to truly keep it offline, definitely recommend just using calibre to send via USB cable. No jailbre
