MacBook Neo has a thermal protection over the chip
I did a similar copper shim mod on my MacBook Air 2019 back then, it helped with the temps a lot but it made it strictly not a “lap”top. There is a reason why there is an air gap, and it is for not literally burning you or cooking your skin.

What do you think could be the main Macbook for the next 4 years? (Budget $2k)
You are comparing apples to oranges. The MacBook Air doesn't have a proper cooling system like the M5 Pro, nor the AIR GPU If you handle multiple screens like a pro, then you are comparing a base M4 model with an M5 Pro. Doesn't make sense

Gaming laptop recommendations
I could be convinced to go Mac because whatever laptop I end up with will also replace my 2018(?) MacBook Air which is on its last legs. It can barely play a YouTube video without the fans spinning up

Unfortunate. I use a Mac mini m4 pro chip ofc I have fans and you don't so thermals are the difference. there are some mods for the MacBook airs the give them that thermal boost. but it wont be near as good as native fans. the only way to solve this is to sell your MacBook and buy an older MacBook P
