The least you could have done is benchmarking your NVME M2 SSD, things like "i don t trust this , i don t feel like" are not Tech argument. Is this a good price/deal?

go with GMKtec, Anything with the Radeon 780M (or better) graphics. I have set up several GMKtec K12 models and they have been great little PCs.I would provide a link, but being that it is less than 2 weeks to Christmas, it will be VERY hard to find one for a reasonable price right now.

Looking to build a SteamOS box for my TV - Need recommendations

GMKtec is a more well known and trusted brand. Probably one of if not the top manufacturer of mini PCs. I would go for the K12. Is $699 a fair price for this miniPC? Based on the Specs (i3-N300, 16GB LPDDR4, 4x NVMe Bays, 2.5GbE Port)

GMKtec makes great gear. I have a more modest model, the M6 Ultra Ryzen 5 7640HS, and I'm really happy with it. My next one will definitely be a K12 or something similar

Mini-PC recomendations for up to ps3

I actually have both a ser5 max and a gmktec k12. I run batocera on the ser5 and played some lighter ps3 games on it with no issues. Is the 890M good for the latest AAA games?

I think you will have more options starting in 2027 and into 2030 and for now you should get a mini that doesn't break the bank to hold you over til then I got a gmktec k12 and I have no regret, I am happy with my choice
