iPhone (and other devices) can be used as a webcam for the Switch 2
You don't even need an adapter in docked mode. Plucked my logitech c920 directly into the USB-A ports on the dock and it worked instantly

They aren’t making you buy it. My Logitech C920 works with a USB-C adapter. It’s just an option for the casuals who don’t have a WebCam that isn’t built into their laptop or phone and just want to buy something they know works without doing research.
