Under extracted .. sour always [Profitec Go + Eureka Mignon Oro Single Dose]

I'm a beginners as well, but my impression from multiple failed sour shots, is that filling the portafilter enough is pretty important for the taste. I have Eureka mignon libra and profitech 600. The grinding setting has to be just right, I my experience. It can be real finnicky.
