X-M5 would be a great option. Don’t worry about the lack of IBIS. The lens it comes with, and quite a few lenses you’ll be using with it, will have OIS (basically IBIS but inside the lens instead). The others will be fast lenses which help mitigate the need, and there are ways to get by without IBIS

Insane price drops: why?

I had s9 silver on launch + 50mm f1.8 deal. Kept the 50mm sold the s9 due to lack of evf and mechanical shutter. I hate to watch out shutter speed for random banding. First mirrorless camera (Sony ZV-E10 vs Fujifilm X-M5?) need advice!

Few points to note - Both ZV-E10 and X-M5 are video first cameras, and both lack EVF and IBIS. Instead of ZV-E10, I would prefer getting a Sony A6400.
