First thoughts

I've had both (Osmo 360, insta360 X5... And also the X2 and X3), and the video quality of the DJI is definitely superior to any of the insta360 cameras, regardless of the amount of official accessories available.

Reccs for a good bike cam

If you're looking for a "dashcam" for the bike I hear Cycliq is the gold standard. Action camera wise you can get wide angle single PoV cameras like GoPro, DJI, Insta360 etc. You can also get 360 degree cameras from the above brands. Osmo 360 lens replacement for 25$ but you must wait few days without cam
