Can you help me choose a dash camera?

Cams typically only record for a few moments after being unplugged, then save the file and shutdown. If you are concerned about an intruder unplugging the camera a Blackvue Box model may partially address that. Thinkware u3000 is indeed a great, reliable, option.

Dashcam

I don't think so, as they are not an option when building the car online in US, only front which is not the highest quality. I am putting in the new Thinkware U3000 pro F/R in my Crown. Had the U3000 in both my Hondas and they have great quality, support and the best parking mode of all the brands.

Thinkware U3000 with ODB2 power kit is likely your best option. Blackvue DR970x plus ii with ODB2 power kit would be a strong alternative. No modifications to the vehicle. High quality. Easy to install and remove without a trace.

What dash cams do you use?

All of the recommended two channel dash cams do what you describe when installed correctly. Some, like the Thinkware and Blackvue, can work that way by plugging in a cable to the ODB2 port, others need you to add fuse taps in the fuse box. DASH CAM RECOMMENDATION

THINKWARE U3000 with OBD ii cable has the best parking mode function with dual radar to identify activity. They just released U3000 Pro with HDR and improved rear camera. I have 2 of them and very happy with quality and support. Ordering the Pro for my new car next week with OBD as well
