AC mesh pro still worth it??
honestly for 45 bucks it's not bad but you're spot on about EOL worries. ubiquiti still supports the AC line but they've been pushing wifi 6 hard. i grabbed a U6 Mesh instead last month and it's been solid with better future proofing. the AC Mesh Pro will probably lose major updates in a year or two

Wanting to switch but needing help with a solution
i'd go with the udr7 plus two u6 mesh units personally. the u6 mesh pros are designed exactly for shelf/table placement - that redbull can shape works great sitting out. the ux7s are nice but you lose some range without hardwire backhaul in mesh mode. for 2100 sq ft on two floors, udr7 on main floor

My 1st setup was a USG3, a cloud key, and an AP. Now I have a UDMP, a 24-port PoE switch, several small switches feeding my ham radio room and my media center, and u6 mesh APs. I have my ubiquity setup covering 3 floors of my 4000 sq ft house, and covering about 1/2 of my almost 30 acre property. Not trying to brag, but there are certainly people who use the gear. I've got a UDM pro, 4 AC mesh pro, a U6 mesh, a U6 Pro, and a couple AC LRs that need to be replaced someday.
