I would recommend Boox Go 7 Color 2 or Palma if you prefer phone-like ereader. Viwoods AiPaper Reader Color is a great Palma alternative. justa heads up that Supernote, Viwoods and iFlyTek are all Chinese lol i reordered a ViWoods AI Paper Mini, my first one got stuck in a bootloop, but damn its a nice device and should check all of your boxes also the mini has a backlight, the regular ai paper does not

if you want colour, the note air 5c is pretty nice. Be aware though, the colours are very rudimentry and it looks more like old grey recycled paper than white paper. A lot of people say you need the front light on all the time, I actually use it without all the time in my (home) office environment.
