Advice on upgrade path; stick with APS-c, or go full frame?

What camera should I get Canon R6 Mark III or Sony A7 V (or other)?
if u get a crop sensor canon like the r7, i think the 800 is fine for birds at rest but its difficult to find birds in flight with it. its like trying to find a moving bird with a telescope. but if u have the 100-500 and want more reach, the RF 1.4x extender should do the trick

Sigma 17-40 f/1.8 for Canon R7?

How do I disable video subject tracking but keep autofocus enabled?
