Anyone ever deal with corners being this high up/center being this caved in?

It is at the very least rooted - you can adjust mesh size in the configs. Those super dense meshes are used with cartographer style bed probes, they can do a few thousand samples in under a minute. If you decide for a bigger printer, do not, I repeat: DO NOT buy a creality K1 Max. I did for exactly this project (I also bought the STLs). The K1Max is a really problematic device. All the best for your project
