Joined the club!
I ended up picking the Viofo A329S, I thought about thinkware’s U3000 pro but ultimately I liked the clarity that Viofo had and I was able to get it significantly discounted through my work.

I use the Thinkware U3000. It's overkill for sure and I would probably go the Viofo A229 if I had the choice again.

Can you though...?
I personally run Thinkware U3000 in my car and was surprised at how badly it performed in the night test. Grabbing recordings is a breeze as the dashcam is always ready to pair with your phone if you've set it up through the app.

Dashcam with LTE that allows me to use my own data sim?
U3000 isn't an LTE cam. Unless you are in the UK where Thinkware offers an LTE option you will want a Blackvue LTE cam.

U3000 Pro with the Thinkware CONNECTED app?
I've got it working. You need two apps, Thinkware Dashcam Link to do some initial install stuff like telling it there's an LTE module connected and then Thinkware Connected to use the cloud features. One feature they did remove from the U3000 Pro is the ability to connect to an external WiFi hotspot
