Rasberry pi 5 vs Ugreen nas
I think the ugreen will be better as it should have more powerful processor. But keep in mind that that ugreen model won’t have space for an internal SSD (which is where you should store Immich’s postgresql db) I would personally go with a dxp2800 so that you can have 2 nvme SSDs

DH2300 as a first NAS?
First NAS go for the DXP2800 Reason is better specs so the photos app will run faster even more so if you later add nvme and run your apps from there.I have a DXP2800 and its really good ugreens UI and own apps are very easy to use and fast.

Which NAS is better for a family movie library?
DXP2800 Here's a good review BUT be warned that you will hit a limit with 2 harddrive bay NAS systems as other's have mentioned. For your 30TB dream, may be smart to get a used office computer and stack HardDrives in there.

NAS. Buy or build?
Just know that the mobo/CPU combo is OLD. Nothing wrong with old, but it won't have the latest tech in terms of jellyfin encoding. It will have slower ports like USB 2.0 and slower sata and maybe not even NVME. It will also pull down MUCH more power than a newer device. You can get a N100/N150 mini
