Because on paper DF54 sounds amazing flat burrs, low retention but I keep seeing mixed real world feedback about workflow and consistency. As one of the people being cited here, I'd like to add that my grinder at the time (the Breville SGP) had a shitty motor, and the rock looked to be a piece of granite. And it wedged itself between the burrs. Also, my df83 was in the mail so I didn't bother trying to fix it.
